Caramelized Garlic Beans

Welcome to what started as a timing mistake, but turned out really good - and very interesting.

After mis-calculating the rough time needed to cook a venison roast, I had started cooking the beans too early. Fortunately, this turned into a solution that was both practical and delicious.

Caramelized Green Beans in Garlic

Serves about 4.

Place oil and garlic in cold, heavy pan over high heat. Stir lightly until garlic begins to sizzle.

Add frozen beans and cover for 2 minutes. Uncover and stir. Reduce heat to low and let cook, covered for 20 minutes, stirring regularly. If you're using a gas stove, you can push the beans to the edges of the pan to reduce risk of burning, but the frequent stirring should prevent that.

Garlic should turn dark and soft, and beans should be starting to change color. Color change is more prominent in wax beans than in green beans.

Remove from heat and let stand for 2-4 minutes before serving.
