Chipotle Guacamole
So, I was looking for something to spice up guacamole, just to give it a little more interest, and well... How about avocados and chopotle peppers?
Spicy Chipotle Guacamole
Serves a lot.
- 8 large ripe avocados, peeled and pitted
- 1 medium yellow onion, minced
- 3 cloves garlic, minced
- 8 roma tomatoes, cut into 1/2 inch pieces
- 1/4 c. cilantro, chopped
- 1 lime (juice and pulp)
- Salt
- 1 small can (about 4oz, I think) chipotle peppers (in red sauce), chopped
um... ok. put avocado in a large bowl. Add onion and garlic and stir together. Add tomato, cilantro, and lime and mix thoroughly (you can use an electric mixer to save time, just keep it on low speed). Salt to taste while mixing. Add chipotle and continue mixing until peppers are evenly distributed through mix.
Serve immediately, or refrigerate. Serve with corn chips as a dip, or as a topping for other Mexican-style foods.
